Becoming a Prep-cook
Joseph is a quiet, dedicated person who likes to work behind the scenes. That’s why he enjoys being a trainee at Little Sprout Café.
Working in the open-concept kitchen, Joseph helps with food preparation. Some of this is familiar work. Joseph has previous experience working at a fast food restaurant. What makes the kitchen at Little Sprout different, is the way that the food is prepared.
“In this kitchen, we portion out each serving by weighing ingredients,” Joseph explains.

The focus at Little Sprout Café is on fresh ingredients prepared by a team of diversely-abled members. The café is a social enterprise of Communitas Supportive Care Society, which supports people who live with developmental disabilities, mental health challenges, and acquired brain injury. Little Sprout Café is one of its services and supports people by providing training that will help them find work in the food services industry.
Chef Kerry says that Joseph is every chef’s dream prep person.
“Joseph is a quiet person who is precise, accurate, and fast,” Chef Kerry says. “He is a quick study and is already up to working at industry speed.”

To prepare for the trainees, Chef Kerry met with staff to discuss the trainee process and talk about expectations. He says his team has truly risen to the occasion.
“They are patient and caring and take their time answering questions,” Chef Kerry says. “It has been a really good process.
Joseph has been a trainee in the café since mid-June. He enjoys the people he works with and has found the training to really helpful.

Along with skills specific to working in a café, Joseph appreciates that doing any job well means showing up on time and learning to do the required tasks to the best of one’s abilities. These are skills he hopes to take into a career in the computer industry in the future.
“I’d like to do something with computers, maybe take a course in coding,” he says.
